Ingredients- two large potatoes, one cup gram flour, one tablespoon semolina, one teaspoon turmeric, one teaspoon chili powder, oil, salt per taste, six garlic cloves, one-inch ginger, coriander leaves chopped, one teaspoon cumin, green chilies.

Instructions

  1. Take your cumin, ginger, garlic cloves, and green chilies along with coriander leaves. Now, take your grinder, add the ingredients along with some water. Grind it into a paste-like consistency. Your green masala paste is prepared.
  2. Now, take your green masala paste, along with semolina, turmeric, red chili powder, and salt, and add it to your besan with a tablespoon of hot oil. Make your batter with this (add three-fourth cup water for a smooth consistency).
  3. Take your potatoes, and start cutting them into round shapes. The potato slices mustn’t be too wide. Keep the potatoes drowned in cold water.
  4. Now is the time to fry the bhajis. Check to see if the oil is hot. Take your potato slices which have been soaking in water, and cover them fully with batter. Slowly release the battered potatoes in the hot oil. Fry it until the exterior is brown and crispy. Remove it from the oil and place it on paper napkins which will soak up the excess oil.

Ingredients- 6 to 7 medium sized potatoes boiled and cut into cubes, 3 tablespoon curry leaves, half tablespoon mustard seeds, 3 tablespoons oil, ten curry leaves, urad dal two tablespoons, one medium onion chopped, two dried red chilies (broken), turmeric powder one-fourth teaspoon, salt per taste, freshly chopped coriander, coconut half cup.

Instructions

  1. Take your oil and heat it, preferably in a nonstick pan. Then add your mustard seeds. The mustard seeds will splutter and start making noises.
  2. Then add your urad dal and curry leaves. Fry the dal until it becomes golden brown. Then add your red chilies and chopped onion. Fry it until the onion starts turning translucent.
  3. Add your turmeric, along with the potato cubes and salt, according to your taste. Mix it well and keep it on the heat for about 5 minutes until the potatoes are done.
  4. Add your coconut and mix well.

Batata Bhaje Maharashtria Style

Instructions- to start this recipe, you need to heat some oil in a nonstick pan. Then take your chopped garlic cloves and add them to the pan. Toss it around for a few minutes. Add your cumin and mustard seeds. Fry them until they start to make noise and release an aromatic smell. Now, put in your onions, chopped preferably, green chilies as per your spice tolerance, and curry leaves. Cook the concoction for a few minutes till it turns golden brown. Add salt per taste, turmeric powder, coriander that is chopped. Mix that in, and keep cooking on a medium-low flame for a couple of minutes. Ingredients- oil, salt per taste, potatoes (boiled and cut into cubes, preferably 5-6), garlic cloves (chopped), cumin seeds, mustard seeds, curry leaves, asafoetida, green chilies according to your spice tolerance, turmeric powder, sugar, coriander.

Instructions

  1. When the potatoes have been boiled properly, start peeling them. Then cut them into small cubes.
  2. Remove some of the cubes, and mash them with a fork. Keep the mashed potatoes aside. It will come in handy when we make the gravy.
  3. Now, heat oil in a pan. Once the oil is sufficiently heated, put in your cumin seeds, mustard seeds, curry leaves, asafoetida, and green chilies according to your spice tolerance. Toss it around in the pan for a few minutes. It will start to splutter and make noise, and the curry leaves will release a nice smell.
  4. Then add your potato cubes, chopped garlic, turmeric powder, sugar, and salt. Add the mashed potatoes to the gravy to make the gravy smoother.

It is a very famous snack and is popular in Gujarat, specifically Navsari and Valsad. The recipe only takes 30 minutes to make but is very filling. Ingredients

2 big potatoes; boiled and chopped, four tablespoon oil, one teaspoon mustard seeds, one teaspoon coriander seeds, one tablespoon chopped garlic, half tablespoon ginger paste, green chili chopped, hing, curry leaves 7 to 8, half teaspoon turmeric powder, half teaspoon coriander powder, half teaspoon garam masala, green chutney, sugar, coriander leaves.

For the green chutney- one cup mint leaves, two cup coriander leaves, green chillies chopped, ginger, 6 garlic cloves, half teaspoon cumin seeds, one fourth teaspoon hing, salt, three tablespoon lemon juice.

Instructions

For the chutney- add your mint leaves, coriander leaves, green chilies, ginger, garlic, cumin seeds, hing, salt, lemon juice into a blender. If you want a smoother consistency, add some water. Blend it well, and your green chutney is ready.

For the bhaji

  1. Heat oil in a pan. After the oil is sufficiently heated, add cumin seeds and coriander seeds to the pan. Then add the chopped garlic, hing, ginger paste, green chili paste, and curry leaves. Toss it in the pan for a few minutes.
  2. Then add turmeric and coriander powder. Make sure it is mixed well with all the ingredients.
  3. Now add your chopped potatoes to the mixture. Coat the potatoes entirely with the mixture. Add some water and then cook it for a few minutes on low, medium flame.
  4. Add your green chutney and garam masala. Your bhaji is now ready to be served. Take your bhaji and serve it on pav with the green chutney and fried chili. Enjoy!

Vangi batata rassa

This authentic batata bhaji recipe has traditional Maharashtrian roots. It is very easy to make and has been a staple Maharashtrian dish for generations. People eat it as a snack, a side dish, or for breakfast. Anyone can make it, and you can even add your own twist to this recipe.

Ingredients- 2 potatoes medium-sized, brinjal 3 small, medium-sized, oil, fresh coconut grated, coriander, garlic cloves chopped, chopped onion, coriander powder, chili powder, garam masala, water, tamarind pulp, salt, jaggery

Instructions

  1. To make the masala, take a blender. Add your grated coconut, garlic, and coriander. Blend this to achieve a paste-like consistency. You do not need to add water to this paste.
  2. Now boil the potatoes. After the potatoes are boiled, peel them and cut them into cube-like pieces. Soak them in water.
  3. Now, in a separate pan, start frying your onions. Once the onion starts changing color, add your coriander powder, garam masala powder, and chili powder.
  4. Mix the concoction well. Add the coconut mixture to this and let it simmer. Add your chopped potatoes to this mixture and start cooking it.
  5. Now, take your brinjal and cut it into pieces. Add the brinjal into the potato mix along with tamarind and jaggery. Cook this for a few minutes. Your vangi batata rassa is ready.

Masala batata bhaje
